Coffee Process
The process begins with the selection of ripe cherries, followed by a 36-hour oxidation in Lohas. After pulping, a submerged fermentation with must recirculation for 48 to 60 hours is carried out. Drying is done in the sun for initial dehydration and is completed with mechanical drying in a silo.
Finca El Diviso y Las Flores by Adrián Lasso & Jhoan Vergara
Finca Las Flores began in 1990 when Edilberto and Nubia, originally from Cundinamarca, moved to Acevedo, Huila, and later dedicated the farm to the production of specialty coffees through the application of science and technology. Currently, Jhoan Vergara and his brother Diego manage the farm, demonstrating the commitment of the new generations to high-quality coffee. Finca El Diviso, a family business with 25 years of experience in coffee production, was started by José Uribe Lasso. Over the past five years, they have focused on specialty coffees, standardizing processing protocols. Jhoan Vergara partnered with brothers Néstor and Adrián Lasso to create El Diviso, which unites the two-family farms of El Diviso and Las Flores near Pitalito, Huila. This collaboration has allowed them to improve the quality of the coffee, processing regional lots by purchasing cherries from their neighbors.
