Specialty Coffee from COLOMBIA El nevado
Colombia is one of the world's leading producers of Arabica coffee and, over the years, the country has become synonymous with quality coffee. The country has cultivated its coffee industry over the years and the spirit of innovation is strong; New varieties of coffee and innovations in processing have come out of Colombia, as well as classic and balanced lots highly appreciated by coffee growers. Most of the country's coffee is grown by small producers scattered throughout its many coffee-growing regions. These coffee farmers in rural Colombia have lived through decades of low-intensity political conflict between paramilitary groups, guerrillas and the Government, although a peace agreement approved in 2016 represented great progress in the peace and reconciliation process.
The 60-70 producers who have contributed to this batch of coffee live in the charming towns of Tesalia and Teruel.
The department of Huila borders with Tolima, and is the most productive region in the country. Huila has a chain of volcanoes, the Nevado de Huila, which has historically enriched the region's soils, creating ideal growing conditions for coffee. Huila has its own designation of origin and produces coffees famous for their bright acidity, balanced body and rich sweetness.
This particular batch has been produced in Rio Negro and Iquira, in Huila. And they are made up of 3 classic varieties of the country: Tabi, Castillo and Caturra. The harvest takes place between April and June and the coffee trees are shaded by trees such as charcoal, cedar and other fruit trees.
