Chiapas Decaffeinated Specialty Coffee
The coffee from the Santa Fé farm in Chiapas is an old acquaintance. We had it years ago and we loved it, as did our customers. In our last decaf cupping, it was our favorite, so we're bringing it back. In the photos, you can see how it's grown in the shade. This is important for slow development, for the formation of aroma precursors, and for our planet.
The water decafs produced by Descamex using the Mountain Water process have always had good sensory characteristics.
They are grown under the shade of Inga trees, which are legumes, which means they have the ability to fix atmospheric nitrogen and carry it to the soil, where it serves as a nutrient for the coffee plant.
