The washing and sun-drying process
Immerse yourself in the classic coffee washing process, where each stage is executed with precision to ensure exceptional quality. The cherries are selected for their sugar content of over 20° Brix, then soaked in water for 2 hours. The process continues with wet grinding, leaving 50% mucilage. After sun-drying in parabolic beds for 16 days, the coffee reaches a humidity of 10.5%. A final humidity stabilization is then carried out for 16 days and it is stored in grain-pro bags.
