Process - Classic Honey
The cherries are harvested with a sugar level above 19 Brix and soaked in water for one hour for cleaning, sorting, and hydration. They are then pulped, leaving 50% of the mucilage, and sun-dried on African beds for 18 days. They are then shade-stabilized in fique sacks for 4 days and stored in GrainPro bags for an additional 15 days. Finally, the lots are cupped and selected before shipping.
