This coffee bean comes from Guadalupe Zajú. Founded in 1945 by Hans Asmus Luethje and his wife, the farm was managed by the Luethje family for over 50 years. In 2017, the Santuario Project began working with the farm, making adjustments to align with the high quality standards.
The Santuario Project is responsible for developing all processes and visiting the farmers involved in supplying the coffees for the program. During the harvest, Santuario staff oversees all activities and processes.
The Santuario Project in Mexico has produced coffees with distinctive flavor profiles, reflecting the diversity and richness of Mexican soils along with the dedication of its producers. Each cup is the result of innovation, collaborative work, and a constant pursuit of coffee perfection.

Process - Classic Natural
Discover the natural process that elevates cherries to new heights of quality. From the meticulous harvesting of cherries with over 22° Brix to the 4-hour soak in water, every step is carefully considered. Sun-dried on African coffee beds for 23 days to reach 10.5% moisture content, the coffee reveals its true character. After 12 days of final stabilization in a warehouse, each bean is stored in pro-grade bean bags to preserve its excellence. Finally, the lots are precisely cupped, ensuring a sublime experience with every sip.
