Process - Cherry Madness
Explore the exciting process at Cherry Madness, where quality reaches new heights. The cherries, with over 24° Brix, are soaked in water for 4 hours before a 69-hour anaerobic fermentation with Coffee-Moussto. After wet milling with 50% mucilage, another 42-hour fermentation with Coffee-Moussto takes place. The parchment is sun-dried on African beds for 22 days until reaching 10.5% humidity. A final stabilization for 16 days in a warehouse ensures perfection before storage.
