Coffee Process
The process begins with the careful selection of cherries at their optimal ripeness point, followed by washing and flotation. Then, a 48-hour oxidation is carried out, followed by a 60-hour controlled anaerobic fermentation in plastic tanks. The process culminates with a 12-hour oxidation. Drying takes place at “Casa Elba” for approximately 15 days, followed by a 2-week stabilization.
Finca Las Flores by Jhoan Vergara
The “Las Flores” farm started in 1990 with a mother who cared for 18,000 coffee trees. Over time, they grew to reach 90,000 trees. In 2006, they participated in the Cup of Excellence, which marked the beginning of their foray into specialty and differentiated coffees. Over the years, with testing and learning, they managed to identify and improve the profiles of their coffees. With the help of Jhoan Vergara, they began to adjust production and post-harvest processes, incorporating varieties such as Pink Bourbon, Tabi, Java, and Maracaturra, as well as experimenting with fermentations in exotic varieties such as Wush Wush and Sidra Bourbon.
