Coffee Process
The cherries are harvested at their optimum ripeness and selected using a flotation process; this allows the densest cherries to sink, separating them from the unripe ones. After this selection, pulping is carried out using a traditional “crusher”. The Red Honey process involves drying with mucilage for 2 days, followed by pre-drying on a ceramic floor for 8 days on African beds. Finally, drying is completed mechanically in a guardiola dryer, maintaining a temperature between 28°C and 40°C for one day.
Finca Aquiares Estate by Diego Roble
Aquiares Estate was founded in 1890 when British farmers were looking for opportunities along the Costa Rican railway system to the Caribbean port of Limón. The estate built its mill, which still represents the quality-oriented approach to washed coffees that only Costa Rica can provide. The farm established relationships with clients in Italy, the United States, England, and Japan, among others, who appreciated and trusted the high-quality product. In 1992, the farm initiated a project to enable people in the Aquiares community to have their own homes, which, as in many old farms, were owned by the farm itself. Now, 96% of Aquiares employees own their own homes, and most have significantly improved them, making Aquiares a thriving community. Likewise, the company benefits from its bond with each member of the community: their loyalty to Aquiares gives them a sense of pride in our product, ensuring high-quality controls at every step of the coffee process. The name, “Aquiares,” comes from the farm’s location, nestled between the Aquiares and Turrialba rivers: “Aquiares” means “land between rivers” in the indigenous Huetar language of Costa Rica.
