Coffee Process
This coffee is grown in the Huila region of Brussels, Colombia, at altitudes of 1350 to 1800 masl. The process begins with the harvesting of ripe cherries, followed by careful selection to remove impurities. It starts with a 12-hour oxidation of the cherry, then it is pulped and oxidized again with the mucilage for 12 hours. Afterwards, a submerged anaerobic fermentation process is carried out to balance the flavors generated in the oxidation, ending with the washing of the coffee. Drying takes place in canopies for 10 to 12 days, depending on the climate, and finally, the coffee is stabilized for a minimum of 10 days in a cellar.

Jonathan and his brother, coming from a fourth-generation coffee family in Huila, Colombia, always had a passion for coffee. Despite some initial failures, they continued to experiment with new fermentation methods for six years. In 2022, their efforts began to bear fruit, achieving a balance between regional and traditional coffees, offering the market a more complex product. Their work is driven by passion and love for coffee, which has allowed them to achieve success in its production.
