The "Giling Basah" or Wet Threshing process is typical of Sumatra. Due to the high humidity in this area, a shorter drying process is sought, for that the last layer of the coffee is removed, the parchment, when the bean still has 30% humidity, when it is usual to do it when it has a 12 %.
