SPECIALTY COFFEE from UGANDA Rwenzori

Produced in collaboration with Agri-Evolve, this natural batch of extended fermentation comes from Mulhuma, in the Rwenzori Mountains region of western Uganda. Mulhuma is a small, hard-to-reach trading center located at 1,600 meters above sea level in the mountains. The center works with 1,161 local smallholder farmers, providing a vital connection to export markets for this remote community. Mulhuma is especially difficult to reach during the rainy season due to poor road conditions. When roads are inadequate, donkeys are used to transport fresh cherries to the collection point.

The center is run by Stephen Muhindo Pundamali, who buys the ripe cherries from farmers at a premium price while providing additional services and projects, such as agronomy training and a coffee sapling nursery.

The Rwenzori Mountains are Africa's highest mountain range located on the border of Uganda and the Democratic Republic of Congo. Covered with permanent glaciers at 5000masl, the slopes slide through an ancient forest reserve into sparsely populated coffee fields and continue up to the plateau of the Queen Elizabeth Game Reserve.

Selling cherries to third parties for processing is a new concept in the Rwenzoris. Traditionally, coffee has always been processed at home, often to a very poor standard. By relieving farmers of this complicated task, greater quality control is allowed. Only 1% of the coffee from the Rwenzoris will be processed in this way.

This lot is processed naturally with a 48h fermentation in a limited oxygen environment. The ripe cherries are harvested by hand and selected according to their density by flotation. These selected cherries are then fermented in sealed airtight bags for 48h, before being dried in the sun on raised African beds for 3-4 weeks. Agri-Evolve staff constantly turn the cherries to ensure uniform drying. Shade is used between 12-15h if there is too much sun.
