Our coffee is grown in the Minas Gerais region, which is located in southeastern Brazil. In Minas Gerais there are many of the highest peaks and some of the main rivers in the country, which makes it an exceptional situation for coffee cultivation.
The harvest is classified according to the type of maturity of the grain. This process is carried out by means of tanks filled with water by the flotation method. Subsequently they are spread in large patios of cement or brick in the sun for drying, this process can last up to 30 days. Finally, when the grain has already reached its optimum drying mills or machines are sent where it is screened according to the size of the grain and finally put in sacks.
Once we received it and after passing the quality controls, we performed a medium-high roast, which allows us to develop the grain more potently, achieving pleasant and long-lasting flavors.
