SPECIALTY COFFEE from ETHIOPIA Ky Kebero
This Fully Washed lot comes from Sidamo, in southern Ethiopia, a region historically and widely recognized for its role in the development of specialty coffee. Over the years, Sidamo has built a solid reputation for producing some of the world's most highly regarded microlots. The high altitudes, reaching 2,200 meters above sea level in some areas, along with fertile soils, abundant and consistent rainfall, and deep local knowledge, create the ideal conditions for clean, expressive, and consistent coffees.
Ky Kebero is named after the Ethiopian wolf, also known as the Simien fox or Red Jackal. It is Africa's most endangered carnivore and one of the rarest canids on the planet, with only about 500 individuals remaining in the wild. The largest population, numbering around 150, is concentrated in the Bale Mountains, west of Yirgacheffe. As part of our commitment to origin, our supplier donates £10 for every bag we buy from them to the Ethiopian Wolf Conservation Programme, directly supporting their conservation efforts.
The ripe cherries are carefully selected by hand-picking and flotation, pulped on the same day as harvesting, and fermented for 36-48 hours. The coffee is then washed in channels of clean water to remove any remaining mucilage. Drying takes place in the sun on raised African drying beds for 12-15 days, depending on environmental conditions. During this time, the parchment is turned periodically to ensure even drying and covered during the hottest hours of the day and at night to protect it from excessive heat, rain, and humidity. Once the optimal drying point is reached, the coffee is transported to Addis Ababa for hulling, grading, hand-sorting, and final preparation for export.
