SPECIALTY COFFEE from COLOMBIA La Muralla
This coffee comes from La Muralla, an informal group of small producers located in San Agustín, one of the southernmost areas of the Huila department in Colombia. Although they now work collectively, many of these producers have been connected for years and are part of the original group that started this project. Most belong to a relatively young generation of coffee growers, many still in their twenties, who bring contagious energy and a great passion for producing high-quality specialty coffees.
The variety in this lot is Pink Bourbon, grown between 1,700 and 1,900 meters above sea level, where the mountain conditions allow for a slow and balanced ripening of the cherry. In this region of Huila, the combination of altitude, fertile soils, and temperate climate creates an especially favorable environment for the development of complex and elegant coffees.
In 2022, a local purchasing point was also opened in downtown San Agustín, allowing them to receive coffee directly from more producers in the area. This model simplifies logistics, reduces costs for farmers, and strengthens the direct relationship between producers and buyers—something especially important at a time when coffee prices have been subject to significant fluctuations.
For this batch, a washed process was used, a classic method in Colombia that seeks to highlight the clarity and expression of the origin. After the selective harvesting of ripe cherries, the coffee is pulped, fermented, and washed before undergoing controlled drying.
The result is a clean and elegant coffee that reflects the character of San Agustín and the collective work of the producers at La Muralla.
