Specialty Coffee from COSTA RICA Alexis Martinez
When tradition meets innovation
The farm ''Los Campos'' is owned by the Ramírez-Navarro family, its founder Mr. Alexis Ramírez was a farmer who dedicated his entire life to agriculture.
In 2015, as a challenge to overcome, they took the big step of building their own microbeneficiary with the idea of processing the coffee themselves to focus on the quality and traceability of their microlots and stop depending on the cooperative system. Working through direct trade has always been a dream for the family, which is why we have decided to work with Grounds Costa Rica so that we can offer you this very special coffee.
The main variety they grow is Caturra-Catuai, although they are taking new steps to plant F-1 Hybrid varieties on their farm. Therefore, we can expect to see new genetic innovations in their offering.
In this batch you have the Catuai variety, a genetic cross between two natural mutations of yellow Caturra Arabica and Mundo Novo.
The plant is very productive compared to Bourbon, partly due to its small size, which allows the plants to be close together; it can be planted at nearly double the density. The shape of the plant allows for easier access to your cherries during harvest. It is characterized mainly by its great vigor and low height.
fermentation process
Many of their batches are processed using fermentation techniques (aerobic and anaerobic), so their coffees tend to be complex, sweet, and fruity.
This in particular is through anaerobic fermentation in which the fruit is collected, the cherries rest in a plastic bag for 4 days. After this process, they are dried in the sun for approximately 30 days, ready for storage on parchment until they are ready for export.
fair trade
This coffee is imported via 'direct trade', without intermediaries. This means that the farmer gets more than a fair price and the money earned from the coffee is distributed fairly. All our coffees are 'single estate' from micro lots that have been carefully selected and processed. Coffee of the highest quality, direct from the hands of the farmer to your cup.
