SPECIALTY COFFEE from EL SALVADOR Las Brisas
This coffee comes from a fourth- and fifth-generation coffee-growing family whose history dates back to the 19th century. Their farms are located in the western mountains of El Salvador, between 1,300 and 1,600 meters above sea level, where the coffee grows surrounded by forests and under agroforestry systems that aim to restore life and balance to the soil.
After generations dedicated to coffee, the family had to reinvent their way of working. The drop in prices after the end of the Cold War and, years later, the devastating coffee rust epidemic that affected the country in 2012, wiping out 90% of the coffee in El Salvador, forced them to completely rethink their production model. From then on, they began to focus on specialty coffees and more resilient agricultural practices.
Today they work with more than 20 coffee varieties and different processing methods, from semi-washed and honey to experimental fermentations. Much of their approach focuses on soil health, using mycorrhizal fungi and diversified farming systems to regenerate the ecosystem surrounding the plantations.
At the same time, they have incorporated technology to better understand every detail of their production. They use an in-house developed application that allows them to track all coffee batches by day and geolocation, also integrating artificial intelligence tools to optimize processes and improve decision-making on the farm.
For this particular batch, the cherries undergo an eight-day anaerobic fermentation in airlock tanks, followed by more than 20 days of natural drying. This long and controlled process aims to enhance the coffee's aromatic intensity and complexity.
A coffee that reflects both a family's history and their vision for the future of coffee in El Salvador.
