SPECIALTY COFFEE Romario Umañaa - Costa Rica
El Centro is located in a micro region of Tarrazú alled Canet.
All the coffees coming from this area at the base of the La Cruz Mountain are impressive year after year.
Romario’s father planted the 2 hectare farm with Catuaí trees in the mid 90s and the family has been tending to it ever since.
They have managed to keep the farm young by well-done pruning, planting new trees, environmentally conscious practices, and consistent fertilizing.
Currently, the project has 35 raised beds that are used to dry their coffee fruit to perfection.
Once the coffee is collected, it gets dropped into the receiving syphon and sent into a simple floating system they constructed in order to remove light fruit and foreign material.
Quickly thereafter, the fruit gets laid out on raised drying beds in a thin layer.
They make sure to move and turn the fruit frequently, as it’s drying, from beginning to end – usually taking about 22 days to reach optimal moisture content.
