Following our philosophy of fair trade and direct treatment, we bring you this excellent coffee grown by Luis Pablo Pereira at Finca Alta Gracia in Brazil, which has been in the family for several generations. More than 5 years ago they joined Santuario Project/Baco and together they have developed these incredible coffees in the highest part of the farm using the most advanced processing techniques and achieving outstanding results.
This is how these beans were processed:
- Selective harvest by hand (sugar level 21-23º brix).
- Cherries are washed with clean water.
- Float selection.
- The cherries are soaked in water for 28 hours.
- The coffee cherries are pulped leaving 45% mucilage.
- The coffee is placed on the African beds for the final fermentation process.
- Final drying in the sun on African beds for 28 days under controlled conditions.
- Humidity up to 10.5%.
- The coffee must rest for 4 days in sisal bags (Humidity Stabilization)
- Finally, the coffee is stored in bags of beans to concentrate the flavors.
The coffees are distributed internationally by themselves, thus ensuring traceability, quality and fair treatment.
